After we spent an entire year trawling the country for every possible burger variation, we thought we'd seen it all. You can probably guess the next bit but yes, we were so wrong.
Just this week, a rather excitingly odd new burger cropped up, courtesy of those mad geniuses at Psychic Burger. We included their trademark, self-titled offering when they were operating out of Birthdays in Dalston but now, after moving to The Old Queen's Head in Angel, they've truly upped their game.
The Pig Salad Burger is a monstrously enjoyable creation. We should know, we've tried it.
The porkiest burger ever (probably), contains the following: a pork, black pudding & chorizo patty, a crispy pig's ear, confit sage pork belly, smoked streaky bacon, Bramley apple jelly, chorizo aioli, butter lettuce, cheddar cheese and brawn crubeen (made of pigs feet). Oh and there's some crackling too because of course.
While on paper it might sound, well, a bit too much, it is in fact a superbly balanced dish. Although, given the variety of rich ingredients, it sort of becomes something slightly different than a burger. You'll need your cutlery, for one and while the staples are there (patty, cheese, bacon), so many other flavours arise that it's more like a gastropub meal housed in a brioche bun.
